Whether you call them a dip or our desi chutney, they never fail to add that tangy punch to the basic recipes.
These easy recipes would give your snacks a really nice company and that emptiness or the constant feeling of “something is missing” goes away.
Let’s dip into the recipes!
- TAMARIND DIP
Servings: 2 cups
Preparation time: 1½ hrs
Cooking time: 30 minutes
Ingredients:
- Tamarind 1 cup
- Jaggery 150 gms
- Fennel 2 tsp
- Red chilli powder 1tsp
- Cumin seeds ½ tsp
- Raisins 10gms
- Rock salt to taste
- Oil ½ tbsp
- Water as required
Method:
- Soak the tamarind in warm water for 1-2 hrs
- De-seed the pulp and strain it.
- Heat oil in a pan
- Add cumin seeds and allow crackling.
- Immediately add red chilli powder thereafter, the fennel seeds. This helps in getting a vibrant color to it.
- Add the previously strained tamarind and allow to simmer for 10-15 minutes
- Add jaggery and allow it to melt. Stir using wooden spatula.
- Check consistency and add water if required.
- Add soaked raisins and salt and cook for another 2-3 minutes.
- Remove from flame and let it cool down.
2. HUNG CURD AND MINT DIP
Serving: 2 cups
Preparation time: 5 minutes
Ingredients:
- Hung curd 200gm
- Fresh mint leaves 3 tbsp
- Rock salt to taste
- Black pepper to taste
Method:
- Take hung curd in a bowl and add the seasonings according to your taste.
- Crush mint leaves and add to the dip. (pounding it with pestle and mortar brings out the best of the flavours)
- Give and good mix and you’re good to go!
3. GUAVA DIP
One of the easiest and quickest dips of all times!
Serving: 2 cups
Preparation time: 2-3 minutes
Ingredients:
- Guava 250g
- Fresh coriander ½ cup
- Ginger 1 inch piece
- Rock salt to taste
- Roasted cumin powder ½ tsp
- Lemon juice 2 tsp
- Green chillies 2-3
Method:
- Cut guava and de-seed it.
- Add the rest of the ingredients and blend them to coarse
** Easiest way to de-seed is by scooping the seeds with a spoon!
4. SWEET TOMATO CHUTNEY
Serving: 1 cup
Preparation time: 10 minutes
Cooking time: 10 minutes
Ingredients
- Tomatoes 3 medium-sized
- Cumin 1tsp
- Salt to taste
- Pepper to taste
- Red chilli powder ½ tsp
- Jaggery 100 gms
- Dry Fruits(optional) as required
- Oil 1 tbsp
Method:
- Heat oil in a pan, add cumin seeds and allow crackling.
- Chop the tomatoes and add them to the pan.
- Stir and cook for a while.
- Add salt, pepper and chilli powder.
- Crush jaggery and add to the mixture.
- Cook on a medium flame for 4-5 minutes to melt the jaggery.
- Remove it from the flame, and cool it down.
